I’ve been slacking. Dinner for the past few nights was a pasta with paprika and a Alfredo sauce and grilled chicken. Then I had a stir fry omelet thing I made with veggies for that next breakfast. And last night I was very proud of. Grilled chicken with pan fried zucchini squash and onion and a small salad as side. :) aside from all the junk we eat before all thing we are starting to slowly get back to eating healthier again.

It only has 450 calories which is an ideal meal size. 

Here we go: 
o     ½ cup oats 
o     cup of water
o     1 banana
o     1 plum
o     1 tsp of brown sugar
o     ½ tsp cocoa powder

Put your oats and water in a small pot, bring to a boil and cook until soft and mushy. Then put your oatmeal into a bowl, top with banana slices and plum, sprinkle brown sugar and cocoa powder on top and enjoy! 

This recipe is full of good carbohydrates, rich in fiber, potasium and has 14 grams of protein

Paleo Almond Butter Chocolate Fudge!

So here’s the thing…I HAVE been cooking. But work has been so busy I haven’t had time to post anything! I’ve been dead tired every. single. day. So I wanted to make a point to share this super yummy paleo fudge recipe so that I don’t feel like I’m only living for my 9 to 5. This fudge was SO easy to make and was a real crowd pleaser that you can whip up in less than 30 minutes. Make it, freeze it and treat yourself!

  • Prep time: 20 Minutes (plus minimum 30 minute freeze time)
  • Yields 16 squares

Ingredients:

  • 1 cup coconut oil
  • 1 cup almond butter
  • ½ cup maple syrup
  • ⅓ cup unsweetened shredded coconut, plus extra to top
  • 4-5 tbsp of unsweetened carob (or cacao!) powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ dark chocolate bar of your choice, chopped

Instructions:

  • Add coconut oil to a food processor.
  • Then add almond butter, unsweetened shredded coconut, vanilla extract, and honey and a pinch of salt. Mix all ingredients until fully combined.
  • Pour half the ingredients into an 8″x8″ pan and use a spoon to spread out evenly.
  • Place in freezer to harden.
  • Meanwhile, place food processor bowl back on the motor and add your carob powder. Add 1-2 tablespoons at a time, mixing as you go to make sure you don’t add too much.
  • Once carob powder is incorporated, add a pinch of salt, mix well, and then pour your chocolate fudge on top of your now hardened almond butter fudge.
  • Sprinkle with chopped dark chocolate bar, shredded coconut, and a bit of salt and place in freezer for 10-15 minutes.
  • Cut into 16 squares and enjoy!!

Ingredients:

1 cup of diced carrots

1 cup of diced mushrooms

1 cup of diced celery

¼ cup of diced shallots

2 cloves of garlic

¾ cup of cooked quinoa from ½ cup of dried quinoa

1 ½ cups of cooked green lentils(from ½ cup dried)

½ cup of oats

½ cup of walnuts

2 teaspoons of Italian seasoning

3 tablespoons of nutritional yeast

1 teaspoon of white miso paste

1 tablespoon of tamari

3 tablespoons of tomato paste

For the sauce on top:

2 tablespoons of tomato paste

2 teaspoons of apple cider vinegar

salt + pepper

2 teaspoons of maple syrup

½ teaspoon if dijon mustard

½ teaspoon of tamari

Directions:

Cook the quinoa until done. Cook the lentils until al dente. Cook the carrots, celery, shallot, and garlic in a pan with oil until there soft. Combine all the ingredients in a food processor and process until a ball of dough forms and everything looks smooth. Combine all the ingredients for the sauce in a small bowl. Put meatloaf in a greased loaf pan and pour the sauce on it. Cover it with tin foil and cook at 350 degrees F for 20 minutes. Cook for 6 minutes more without the foil on. Let cool for 5 minutes before slicing.

Original Recipe: Nagi | RecipeTin Eats
Serves: 3 Supper Proteins

This is a homemade IP phase 1 friendly version of the popular Honey Mustard Sauce.  The Honey Mustard Sauce is slightly tangy, sweet and beautifully creamy- wonderful with chicken.  Serve on cauliflower mash, garnished with parsley, with a simple side salad for a complete IP supper meal.

Ingredients
1.5 lb chicken tenderloin or chicken breast cut into thick strips (Note 1)
Salt and pepper
Seasoning (optional - Note 2)
2 tbsp IP potato puree
1 tsp garlic powder
Thickener
1 tbsp WF mayonnaise (Note 3)
1 tsp IP potato puree
Sauce
1½ tbsp + ½ tbsp olive oil
2 garlic cloves, minced
1 cup chicken broth / stock (250ml)
¼ cup Dijon mustard (70g)
¼ cup WF pancake syrup(85g)
Optional Extras (I used these)
1 - 2 tbsp wholegrain mustard (adjust to taste)
2 sprigs thyme or ½ tsp dried thyme (Note 4)
Fresh parsley, finely chopped

Instructions
1. Sprinkle chicken with salt and pepper, then toss with Seasoning if using.
2. Thickener: In a small bowl, mix together the WF mayonnaise and IP potato puree.
3. Heat 1½ tbsp oil in a skillet over medium high heat. Add chicken and cook for 2 minutes on each side or until golden. Remove onto a plate.
4. Reduce heat to medium. Add remaining oil in the middle of the skillet and put garlic straight onto the puddle of oil. Sauté for 20 seconds or until golden (don’t let it burn).
5. Add chicken broth, bring to simmer, scraping the bottom of the fry pan.
6. Whisk in Dijon Mustard and WF pancake syrup, then whisk in Thickener (make sure you scrape it all in).
7. Add thyme and wholegrain mustard, if using.
8. Cook for 1 - 2 minutes or until starting to thicken. Adjust salt and pepper to taste.
9. Return chicken and any juices pooled on the plate into the sauce. Turn to coat and reheat through - about 1½ minutes - or until sauce is thickened to your taste.

Notes
1. If you use chicken breast, like I have, cut it vertically into 1cm 2/5" thick strips (so they are like chicken tenderloin pieces). But feel free to cut it as you please (bite size, pounded thin etc). If you cut it into bite size pieces, you will need a touch extra potato puree, garlic powder and oil (because more there is more surface area). There is enough sauce.
2. The seasoning for the chicken is optional - still fab even without, but it adds extra flavour on the chicken and makes it a little bit more golden and crispy. You could also add other flavourings, like paprika, onion powder and even mustard powder. I usually don’t use the seasoning when I make this as a quick meal.
3. I use mayonnaise because it has flavour and adds a bit of richness to the sauce, but it’s not critical. You could easily use chicken broth or water- just need something to dissolve the potato puree in.
4. The thyme is optional, I like adding a herb just for another layer of flavour. It can also be substituted with: rosemary (1 small fresh sprig / pinch of dried), 4 tarragon leaves (fantastic), 1 tbsp fresh oregano leaves or ½ tsp dried.

9/13 food choices

Today isn’t the first ~official~ day of my weight loss journey, I’ve been working on it for about a week and a half now. But I’m feeling really awesome about the food choices I’ve made today! I’m trying to stick to 1200 calories a day, if I go a bit over to 1500, it’s not the end of the world though.

Breakfast was a hard boiled egg (unfortunately I can’t stomach them without a literal ton of salt, but I’m working on it!)

Lunch was a Greek yogurt with almonds and a few ounces of turkey.

I made a protein smoothie for a snack, I was super hungry! It consisted of about a half cup of skim milk, a banana, a scoop of protein powder, and cinnamon! Super yummy.

I haven’t eaten dinner yet, but my husband and I are planning on sharing a beef a broccoli dish!

Easy Balsamic Beef Pot Roast
I felt the chill of autumn as soon as I walked out the door this morning and comfort food immediately flooded my mind.  I’ve been with IP for over 7 years now, and now I’m total pro at making any recipe phase 1 friendly so comfort foods are no longer a restriction on IP anymore.

(This super easy and very delicious Phase 1 Beef Pot Roast can be made on the stove, in the slow cooker or in a pressure cooker.)

Original Recipe by: Mellissa Sevigny
Serves: Four- 8 oz servings (serve with cauliflower mash for a complete IP supper meal)

Ingredients
• One boneless chuck roast, approximately 3 lbs.
• 1 Tbsp IP salt
• 1 tsp black ground pepper
• 1 tsp garlic powder
• ¼ cup of IP balsamic vinaigrette dressing
• 2 cups water
• 1 tsp of onion powder
• ¼ tsp xanthan gum or 1 tsp of IP potato puree
• Fresh parsley, chopped to garnish
Instructions
1. Season the Chuck roast with salt, pepper, garlic and onion powder on both sides.
2. In a large heavy bottomed pan sear both sides of the roast until browned. Deglaze the pan with the balsamic vinegar and cook for one minute.
3. Add the water to the pan. Bring to a boil.
4. Cover and simmer on low for 3 to 4 hours.
5. Carefully remove the meat from the pan to a large bowl. Break carefully into chunks and remove any large pieces of fat or other refuse.
6. Whisk the xanthan gum or potato puree into the broth and add the meat back to the pan.
7. Serve over Cauliflower Mash, garnished with lots of fresh chopped parsley.

To make in the Pressure Cooker:
1. Cut your chuck roast in half so you have two pieces. Season the roast with the salt, pepper, garlic and onion powder on all sides. Using the sauté feature on the instant pot, brown the roast pieces on both sides.
2. Add ¼ cup of balsamic vinegar and 1 cup water to the meat. Cover and seal, then using the manual button set the timer for 35 minutes. When the timer runs out, release the pressure by moving the lever to the “venting” setting. Once all the pressure is released uncover the pot.
3. Carefully remove the meat from the pan to a large bowl. Break carefully into chunks and remove any large pieces of fat or other refuse.
4. Use the sauté function to bring the remaining liquid to a boil in the pot, and simmer for 10 minutes to reduce.
5. Whisk in the xanthan gum or potato puree then add the meat back to the pan and stir gently.
6. Turn off the heat and serve hot over cauliflower mash, garnished with lots of fresh chopped parsley.
