Spinach Stuffed Chicken Breast Recipe:

Ingredients: 3-4 whole chicken breasts, 10 oz-1lb spinach, 1 medium onion,  3-4 cloves of garlic, olive oil (any oil of you prefer), ½ cup - 1 cup of mozzarella cheese (skip if you’re eating clean), flour, salt and pepper to taste (and other herbs depending on your taste.)

Recipe: 

In a large pan, heat the oil and sautee the onions and garlic over medium heat for about 1 minute, but not until it’s browned. Add all the spinach, the salt, and pepper and toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. In the thick side of each chicken breast, cut 3-inch-long pocket to within ¼ inch of opposite side. Spoon about ¼ cup spinach mixture into pocket in each chicken breast. Coat it with flour and in a different pan, heat oil on medium-high heat and add chicken and cook for 8-10 minutes with the pan uncovered (just to get it golden brown) then sprinkle salt and pepper and put it into the oven (preheated at 375 F) for 10-20 minutes longer (depending on the size.) Can be served with either a kale salad with tomato, bell peppers, cucumbers (and feta cheese if you like) and using balsamic vinegar/lemon instead of a heavy dressing) or with rice and mushroom sauce (or even better, orange sauce.)
