When my suit trousers began to get a little snug I was able to lose two inches from my midsection in just a few weeks. My wife was frustrated because I was eating only peanut butter, saltine crackers, greens and fruit with a handful of rice. She said “how can you eat like that?. I replied, “like what?”.  When I ate I only gave thought to the nutritional content of the food.

Butternut Squash, Lentil and Spinach Curry

Ingredients:

  • 320 g butternut squash (just the flesh)
  • 60 g uncooked mixed lentils
  • ½ vegetable stock cube
  • 40 g white onion, chopped
  • 40 g thai red curry paste
  • 200 g full fat coconut milk (½ a can)
  • 200 g chopped tomatoes
  • 150 g young spinach
  • 1 naan bread to serve

Recipe:

  1. First, pre-heat the oven to gas mark 4/350F/180C and line a roasting tray with foil or parchment.
  2. Cut the butternut squash into bite-size chunks, then line up on the tray and spray with a little cooking spray. Roast for 30-40 minutes until tender, stirring halfway.
  3. Meanwhile, rinse the lentils before adding to a pot along with the stock cube and covering with cold water. Bring to the boil, then allow to simmer for 12 minutes.
  4. Heat some cooking spray on a non-stick pan and add the onions. Fry until soft, then add the curry paste, tomatoes and coconut milk. Stir every so often as the sauce thickens (about 10 minutes). Meanwhile, heat up the naan bread in the oven.
  5. Finally, add the squash, lentils and spinach to the curry and season to taste. Cook for another couple of minutes, then serve with the naan bread.

Notes: I adapted this (with little change) from a BBC recipe to cook for my mum on our vegan nights because we both LOVE curry and this was a hit!

Serves 3, 274 calories

Toast the bread, and fry an egg on the pan with salt & pepper to taste (I also like to add chili flakes to spice things up). Then I spread some fresh pesto on each toast & mash the avocado over the pesto with a fork. Then take some goat cheese (or optional feta cheese), and crumble it on to the toast. Top it of with the fried egg and you are good to go 😍

ingredients (4servings):
- 500 g minced beef
- 1 onion (cut in to little pieces)
- 1 egg
- ½ red pepper (paprika)(cut in to little pieces)
- 1 tomato (cut in to little pieces)
- 1 clove garlic (grated)
- 2 tablespoons fresh herbes like parsley and coriander (cut in to little pieces)
- a bit of panco or breadcrumbs

Directions:
- take a bowl and put all ingredients in exept the egg and the breadcrumbs/panco
- mix everything in the bowl
- whisk the egg
- put the egg with the rest and mix again
- add some fresh black pepper
- add some panco/ breadcrumbts (as much as needed, best is to use just a bit)
- mix again
- make 4 big burgers
- put in a pan and bake each side for a few minutes

Nutritional facts (1serving):
energy: 323 cal
protein: 34 g
carbohydrates: 4 g (sugar 3 g)
fat: 19 g (saturated 8 g)
fiber: 1,5 g

These are actually fairly simple to make. I will post the recipe and after photo. I did modify a few things. I replaced the Greek yogurt with unsweetened apple sauce and instead of a ½ cup of water, I did ¼ cup of unsweetened almond vanilla milk and ¼ cup of water. These muffins are unprocessed and clean so you can store them in the fridge with tin foil on top or Tupperware.

Why you should use seasoning and spices :

1) It makes your recipes taste amazing. Look at the picture ; it’s rice, zucchini, carrots, broccolis, mushrooms, onions, garlic. I added ginger (good for your digestion and health in general + enhance the flavor of anything) to the veggies, and I used 1teaspoon of curcuma (which is a powerful antioxidant) and some oregano in the rice. 

2) It makes cooking less boring &  it colors your plates.

3) It adds micronutrients to your diet. As I said, curcuma is pretty amazing.

4) You can make a bunch of recipes with a low budget (hello fellow students) without feeling deprived of any kind of food nor bored by noodles. 

5) The health property contained in most of spices will help you to prevent all kind of diseases and fight cancer.

Avocado
Olive Oil
Lemon Juice
Salt & Pepper
Prepared Quinoa
Diced Tomato
Black Beans
Corn
Cumin
Chili Powder


Per avocado, 4 TBSP of quinoa mix will be used


1) Slice avocado in half. Remove pit. Brush olive oil, lemon juice, and salt and pepper onto surfaces.
2) Grill avocado until nice char marks appear.
3) Mix quinoa, tomato, black beans, corn, cumin, and chili powder together. Place mix into holes of avocados.


Serve warm. Optional garnish: Cilantro and lime juice

apparently my auntie is a little plant freak too! her balcony looks like a little garden (if it was mine I would have more plants and make it look like a little forest, lol!!!) she has basils everywhere. they say basil repels mosquitoes, so she’s placed some on the windowsills because my little cousin is affected by mosquito bites (she has the same name as me and we share birthdays too!! I know it’s irrelevant but wanted to fit that in here coz how often does that happen?!! lol) my aunt is also into herbal medicine and knows quite a lot. the last night I was there we talked about herbalism, plants and animals until morning.
