dinner tonight was super last minute, as i was rushing out the door to get to a party. not only was this meal fast, it was also convenient, healthy and most importantly, fricken delicious!

lazy girl/boy pizza:

(makes one)

ingredients:
• 1 piece of wrap bread (i used
natureen’s organic spelt flour wrap)
• ½ a carrot, diced
• 1 tomato
• 80-90g firm tofu
• ½ cup baby spinach
• 1 tbsp red onion
• 1 tbsp green onion
• 1 tsp nutritional yeast, paprika, thyme and cumin

method:
1. pre heat the oven to 250C (480F)
2. boil the carrot until soft and mashable. while you’re waiting for the carrot to boil, dice your tomato and red onion, and thinly slice your tofu and green onion.
3. once the carrot is boiled, in a small bowl or mug, mash the carrot.
4. place the wrap bread on a pizza tray or regular tray.
5. spread the mashed carrot all over the wrap bread. then add the baby spinach in a thin layer above the carrot. next evenly add the remaining ingredients onto the wrap bread.
6. sprinkle the nutritional yeast, paprika, thyme and cumin over the wrap bread.
7. place the tray of pizza in the oven at 250C (480F) for ten minutes.

and there u have your healthy, quick and yummy pizza! i created this bad boy out of literal vegetable scraps and left overs in the fridge so you can create so many different topping combinations with this recipe.
